A black fungus that grows on corn and is considered a delicacy in Mexican cuisine. It has a deep, earthy, mushroom-like flavor and goes beautifully in quesadillas, soups, and sauces. In English it is called "corn smut," but that name really does not do it justice. Foreigners are often surprised that something that looks so strange tastes so good.
