Uruguay's most iconic sandwich: thin slices of beef tenderloin layered with ham, bacon, melted cheese, a fried egg, tomato, lettuce, olives, and mayo. It is a national institution that Uruguayans defend with fierce pride. According to local legend, it was invented on the spot when a customer asked for something as good as a baby goat.

Examples

The best chivito I ever had was at the Mercado del Puerto in Montevideo.
