It comes from the Chilean and Argentine comic strip Condorito, where characters literally fall flat on the ground with a 'plop' when something absurd happens. Used when reality hits you so hard you don't even know how to respond.
"Me dijo que no iba y yo quedé plop. -> He told me he wasn't going and I was left speechless."
"La respuesta fue tan mala que hice plop. -> The answer was so bad I just went plop."
